Free and independant œnological consulting
Our laboratory provides consulting and œnological testing services. It remains free from any commercial product activity. Our œnologists prescribe their recommendations, œnological products and services free of any hindrance by only offering what is best for your wine. We deliberately made this choice out of a strong desire for independence as we do believe that one cannot be a good “physician” and a “pharmacist” at one and the same time.

Laboratoires Dubernet œnologists, who have a good knowledge of production structures and their hard economic realities, are always concerned about matching appropriate means with their economic performance.

Harvest and vinification procedures
The œnologist will visit the estate and winery on a regular 3 day (maximum) basis, at set times :
- Visit to the vineyards and follow-up of maturations.
- Assistance in vinification procedures and counseling.
- Tasting and commenting on wines during vinification.
- Commenting on and assisting in the interpretation of test results.
Post vinification procedures
- Full cellar assessment, tasting and test comments.
- Complete tasting and cellar assessment comments after racking.
Blending
The handling and control of the blending process is crucial to achieve a good balance and quality of the wines. Laboratoires Dubernet œnologists have been developing wide expertise in the art of blending varieties, of finding the subtly balanced blends that will generate the best vintages to meet the consumers and producers expectations. Our consulting œnologists assist winemakers in developing the blending varieties during tasting sessions. These sessions usually take place in the laboratory tasting rooms that provide optimum conditions to perform such a precise process.
Follow-up and maturing
Making and maturing wines reveals their potential and shapes their profiles. Laboratoires Dubernet consulting œnologists offer you their wide expertise on how to make choices and select the techniques best suited for maturing your wines while they supervise their development with you. Our œnologists take great care in monitoring the preservation of the wines and cooperate with you in regular analytical tests.
Winemaking and bottling/packaging
A good knowledge of winemaking and wine preparation for bottling is the last important stage, first to ensure a perfect presentation of products to the consumer and then to preserve wine stability in bottles. Laboratoires Dubernet provide you with professional services that combine analytical assessments and tests carried out by your consulting œnologist for stabilization treatments (stabilization, fining, filtration…) and then for bottling or packaging.
